60D is a pretty decent choice for a mid-range camera, and 70-300mm is a very useful tele zoom for a 1.6x crop camera. My wife's favourite lens is a 70-300mm on DX, which is 1.52x crop, and jop said he had a 70-300mm lens, too. Definitely very practical for shooting scenery, flowers you can’t get too close to, cityscapes, sunrises, sunsets, wildlife and lots more.

18-135mm falls into that category of the lens to take with you when you don't want to think about which lens to take. It covers the entirety of the most useful focal length range. If you want to travel light, or you want to be able to take snaps but don't have any particular shots planned, this is a good general-purpose lens to carry. It's far quicker to zoom than to change lenses, so having this range available all at once improves your chance of getting an unexpected shot when you see it setting up. I have an 18-200mm zoom for that purpose.

Remember that carrying overlapping range lenses can be a bad idea as it can lead to indecision. If you're carrying your 18-135mm and your 70-300mm at the same time, you have that 70-135mm range where either lens could frame the shot. You don't want to be wasting time thinking about which lens to use, and constantly swapping lenses gives dust more time to get into your camera. If you absolutely must carry overlapping lenses, learn to be decisive about using them.

Now that you've chosen Canon, we can talk about what Canon does better than Nikon. You'd do well to get yourself a fast (f/1.4 or f/2) 35mm prime lens for indoor and low-light work. Canon can actually make a 35mm lens that doesn't distort too much, unlike some of Nikon's offerings.

The Canon 100mm macro is better than Nikon's 105mm macro - less focus breathing so it's a lot easier to compose a shot. The canon 10-22mm ultra-wide zoom distorts less than the Nikon 10-24mm equivalent (but at 1.6x crop it's not quite as wide as the Nikon). The Canon 14mm f/2.8 also has better distortion characteristics than the Nikon equivalent, at the cost of having worse flare and ghosts.
