Well for preservation and emulation:
High-resolution photos of all the boards so chip markings are visible
Dumps of system BIOS, video BIOS, any other BIOS
Documentation of how everything connects up
Make sure when you image the hard disk you don't let your OS automatically mount and potentially write to it
