I'd do a push-pull spinner because you may not be able to later, but regular spinners will always be around. I didn't know anyone was making push-pulls since Randy has not been.
Stick-wise there's lots of things you can do. Gat gives some good ideas. Q-bert needs a turned stick. An alternative is the U360. That way you could make P2 and 3 rotary, and be normal proximity and all. If you go with Gat's idea, you might as well make P1 and 4 rotary.
@Gat: the flight stick is digital, typically (think Zaxxon or MACH 3), but on occasion people have put in analogue, for later 80s and 90s games.
