MAME doesn't support colour management. MAME always uploads 8bpp textures in the operating system's default colour space. If you've got a calibrated setup, that's usually sRGB with gamma 2.2. So on a wide-gamut, 10bpp, or high dynamic range monitor, it just uses a subset of the colour space available.
