Just a heads up, any discussion of coin mechs here is heavily frowned upon. Even if your setup is completely innocent, MAMEDEV and other interested parties don't want to provide assistance to anyone who might want to set up an illegal, for-profit system.

To answer your last question, your best bet is to use the latest MAME and turn on automatic save states. The state of the game (including the high score) will be saved when you exit and loaded when you launch. Not every game supports save states, but a good many do. It's less buggy than the old high score saving, plus you don't have to muck around with obsolete versions of MAME.
