Building novelty/original arcade cabinets

Like most people here, I've been a gamer all my life. I remember the bad old days when you had to go to an arcade and squander vast amounts of cash into arcade machines and stuff.

I remember back in the day most arcade cabinets that I was used to were generic ones. I grew up in the Middle East and we rarely saw the dedicated cabinets for most games (and sometimes I'd see cabinets with bezels and stuff for completely different games and an entire different circuit board put into it... one arcade I knew used to have the original Street Fighter I... yeah I'm old enough to remember the pre-Street Fighter II days. They converted that one to Street Fighter II once the game hit the scenes in 1991 and the old game quickly became history).

That being said. I've seen so many people build their own arcade cabinets and I think that is awesome. But it got me thinking... what about cabinets that had a non-conventional control scheme? Or novelty features put in.

I mean take Q*bert and Tapper. The original Tapper had a pair of beer taps that you pulled down to fill the beer mugs, and Q*bert had a mechanic that, if Q*bert fell down, the bottom of the machine would make a knocking sound, giving the impression that Q*bert actually fell to the bottom of the cabinet.

Did anyone try to do stuff like that? I saw on youtube someone testing the Q*bert knocker, but I don't know if he was repairing an existing game or making a new one, I don't know...

Anyone got any information on this? I'm really curious to see if anyone built anything other than a generic arcade. If I ever do build my own cabinet, I want to try to build it for an arm wrestling machine or boxing.
