Just picked up an MK Jamma cabinet converted from TMNT, Need PC advice.

I am looking to convert this fully into a MAME cabinet and I need some advice on what OS to use for interface. I know Windows 7 has issues. Are there any good Linux, OSX or live CD builds? I am also looking to keep the monitor in the cabinet I know there is an Arcade VGA 3000 card out there that seems like my best bet. Do I need an adapter? What about hooking up controls?

ArcadeVGA and J-Pac, but why use a good working MK cab? Or are you gonna keep it stock?
