Adjust Sensitivity on Ultimarc Spintrak

I've managed to get the Ultimarc Spintrac working on a 60-in-1 Icade jamma but wondering how to get the sensitivity adjusted.

It was a bit of a pain but here's a video I posted with the setup etc.
