Oh man! Nesticle and Stella was what hooked me in 1999. I was such a diehard compufreak back then I refused to upgrade my desktop from Windows 3.11. Trumpet Winsock and Netscape Communicator 4.x handled my browsing needs just fine. :-)
DOS was made for gaming. And Stella and Nesticle shined upon it.
But I knew of emulators prior to that. Barring terminal emulation software, my first emulator experience happened in my BBS days around '91 or '92 when I discovered an emulator for the Timex Sinclair. I didn't know much on how to use it but it was one of those things that reached out to those days at Kmart when I checked out a tiny little Timex Sinclair as a kid.
