This is a bit off topic however is it possible to hard mod an 8-bit console with pin adapters to play games ranging from the Atari console series to Coleco to Intellivision to ZX Spectrum, etc? Sort of like an all-in-one?

Nope 8-bit consoles are too weak to emulate prior systems. The closest thing you could do (which would be dumb but people have done worse) is gut a dead one and replace the guts with a computer guts like a mini ATX if that would fit, or some raspberry pi shit, then have that run emulators.

So then no cartridges? Quite a shame. I have some pretty old carts that I'm wanting to boot up.

I don't really understand the question but no there's no mod to an NES etc. that will let you put another system's carts into it. There's some new systems that will let you put in like NES/Genesis/SNES era systems carts that I saw for sale at Fry's but who knows how accurate it is. It's fairly pointless when you can just buy the original systems on eBay.
