Which of these two setups are best for a MAME machine?

Hey everyone, I just recently upgraded my PC and now I have a good amount of parts leftover and other parts I've had just hanging around that I'd like to use to upgrade my MAME PC in my MAME arcade cabinet. But I need some advice.
What would be the better MAME hardware to use of these 2 setups? Both machines will have the Quad 2.2Ghz Processor Option A: 4GB of DDR2 Memory Two Geforce 8800GTS 512MB video cards SLI together
Option B: 8GB of DDR 2 Memory One Geforce 8800GTS 512MB video card
(I'd would love to have the 2X8800GTS cards sli and the 8GB of RAM but the system board I have that supports SLI has 2 dead ram slots so I can only go as high as 4GB on it )

MAME only uses the CPU and HLSL will use your GFX cards.
Intel CPUs are better for MAME then AMD CPUs of same generations.
I'm not sure how well HLSL works on SLI setups, but the more modern card the better (GTX 4XX, 5XX, or ATI equivalent.
Not much difference in MAME between 4GB and 8GB RAM.
