I want to get a flight stick that's suitable for mame arcade games, not one with a thousand buttons.
Is there a particular one that works well with mame?

MAME will work with any controller that's recognized by Windows and can be calibrated from the game controllers control panel.
Any axis or button that can be calibrated or verified from there will be mappable in MAME.
Keep in mind that MAME lets you map analog controls to the entire range of any analog axis or just the + or the - part of it.
