Giant Warlords cocktail Paddles using Mame and 4 pots with dead zones.

We have a custom Warlords cabinet running on Raspberry Pi 4 using fairly current version of Mame 0.250 Dec/Jan 2023.
An I-PAC is used for the interface.

There is an issue on all 4 pots where at the halfway point on the dial which is the corner of the castle on screen the pots are at 0 and stay there for about a quarter turn then the paddle on screen starts moving again.
We are at CAX and had a few tech friends reviewing the issue.
There is mention of there being a center gap that is useful for joysticks we found online but otherwise were not able to find any information about how the available settings could be set up to alleviate the problem.

Any thoughts on the topic?
btw: this version of mame is a project from arcadecontrols.

I wanted to both utilize the most current version mame and use the artwork available from the upright cabinet to make this cab looks and play its best.
