This, this, and this. I had the same questions years ago, but also figured out that I should try and learn basic fundamentals about programming and dug into the source code and made the modifications myself. Also changed some regions, etc. Basically, I made my own version of MAME suited for me.

It's not difficult to learn if effort is put into it. And no, making posts asking others how to do it won't get you anywhere either.
